Pierre Marcolini has designed a new collection of summer chocolates that goes particularly well with sunshine and heat-waves. The Pastel collection is quite the opposite of the seasonal classics, frequently associated with grey skies and cool days.
These dainty 5-gram morsels have a sumptuous fruity filling infused with lime, passion fruit, mango and yuzu (a Japanese citrus).
They are best eaten straight from the fridge (6°C). Cold attenuates taste, and we wanted to bring you chilled chocolates with an optimal flavour balance. The recipe was carefully designed so they would taste best at a cool temperature; they are not too sugary, even slightly salty, with a fine shell of white or dark chocolate for sweetness and structure.
