One man is on a mission to change the face of Vietnamese food in London forever. With great successes such as Cay Tre, Viet Grill and the recently opened funky Banh Mi deli, Keu!, which has fast become THE place to get one of the best sandwiches in Shoreditch, Hieu Bui is ready to focus his attention on the well-awaited opening of his second Cay Tre, which he brings to Soho.

Cay Tre Soho opened on Dean Street in May.  Designed by uber restaurant designer David Archer, Cay Tre Soho is an exciting new departure in Asian restaurant design and will set hungry tongues wagging with a taste for the extraordinary.

Cay Tre is the renowned Vietnamese restaurant in London’s east end, revered by foodies for its quirky charm and commitment to bringing both the traditional and modern tastes of Vietnam to London. With his unrivalled passion to explore the changing face of Vietnamese food, and his experience from living and eating out in London, Hieu has pulled together, what he believes to be a more modern face of Vietnamese gastronomy. Hieu’s restaurants have helped spearhead a change in what we have come to expect in Vietnamese cuisine. 

Exploring both the everyday and the underbelly, Hieu brings us dishes such as spinning roast Tamworth Pork, spicy ground pork belly stuffed with ‘mac mat’ curry leaves, found in the north near the Chinese border.  This is then stuffed into pork skin, sewn into a handbag like shape, boiled gently in aromatic herbs and spices and roasted in honey, or his Dung Do mutton curry with Vietnamese herbs, served with rice noodle buns – one of the oldest dishes from the largest Indian mosque in Saigon.  Hieu brings us diverse flavours, well-sourced ingredients, the freshest of herbs and serves it all up in a fun and lively environment that he knows we will love.
